It would be great to hide/disable the central part (which is empty) for offline recordings, and keep just the left panel with the list of calls and the right panel with the transcript

That's a great idea. I've been trying to come up with things to fill that area, but for some reason just allowing it to be hidden didn't occur to me. There will be a new button with the sidebar show/hide in the toolbar next to the "offline" toggle that will hide the centre column in the upcoming release. I've got some ideas for things to put in the middle though when I've got more tokens and time. Prob add a commitments area that shows sections that have mentions of time.
